Ingredients
2 pounds ground beef
1 c. chopped onion
1 Tbsp flour
1 - 16 oz can tomato sauce
1 tsp salt
1 tsp chili powder
1/8 tsp black pepper
1 c cubed cheese (I like to use more)
2 packages corn muffin mix
Instructions
Preheat oven to 400 degrees.
In large skillet (or dutch oven) cook beef and drain well. Add onion and cook another couple of minutes. Stir in flour, add tomato sauce, salt, chili powder and black pepper.
Remove from heat and add cheese.
Spread evenly over bottom of 10.5 x 7.5 rectangular pan (you might be able to squish it in a 9 x 9 square pan).
Then prepare muffin mix per package instructions. Let stand 5 minutes.
Bake in 400 degrees over for 30 - 40 minutes or until cornbread is golden brown. Let stand 5 minutes and serve.
Beef Upside Down Cornbread
This is a go-to recipe that’s been in my family for decades. So easy and a hit for everyone.
Ingredients
1 pound ground beef drained
14.5 oz Beef Broth
16 oz Kidney Beans (1 can, rinsed and drained), sometimes I will replace the Kidney Beans with 1-2 15 oz cans of Chilli, I prefer Stagg Chili)
15 oz Kernel Corn (1 can, do not drain)
10 oz Rotel (1 can, I prefer the mild Rotel)
1 oz Hidden Valley Ranch Seasoning Packet
1 c. Chopped Onion
Optional: You can add avocado, sour cream, and cheese to your individual bowl of yumminess. Also, my kids prefer eating their Taco Soup with tortilla chips (Scoops).
Instructions
Gather all your ingredients.
Brown hamburger in frying pan and drain.
Chop onion and add to hamburger while it’s browning.
Grab crockpot and turn to medium setting.
Add other ingredients to a Crockpot and stir.
Add browned hamburger and onion to crockpot, stir again.
Cover and warm all ingredients.
Garnish with optional ingredients noted above.
